The scaling up of keto starts with a study published in Science in January 2013.

Scientists at the Gladstone Institute, a San Francisco–based research center, found that powerful antioxidant and anti-inflammatory genes are activated by beta-hydroxybutyrate, a ketone body produced when you limit calories or carbs.

The keto diet could, as the press release put it, “slow the aging process and may one day allow scientists to better treat or prevent age-­related disease, including heart disease, Alzheimer’s, and many forms of cancer.” Read more...
